- In a small bowl, combine buttermilk with a splash of lemon juice if needed, and let sit for about 5 minutes.
- Peel sweet onions, trim tops and bottoms, and slice each onion into petal-like blooms without cutting all the way through.
- In a large bowl, combine flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Whisk together.
- Dip each onion into the buttermilk mixture and roll in the seasoned flour mixture for even coating.
- Preheat the air fryer to 380°F (190°C) for about 5 minutes.
- Place coated mini blooming onions in the air fryer basket, spaced apart, and spray tops with cooking spray or oil.
- Air fry the onions for 10-12 minutes, shaking the basket halfway through.
- While onions are frying, mix a simple dipping sauce with mayonnaise, ketchup, horseradish sauce, and lemon juice.
- Remove crispy mini blooming onions once golden and serve warm with the dipping sauce.
