For the Salad
  • 4 cups Romaine or iceberg lettuce Chopped
  • 2 cups Shredded red cabbage
  • 2 cups Shredded chicken Use rotisserie or poached
  • 1 can Mandarin oranges Drained
  • 1 packet Instant ramen noodles Crushed
  • 1 cup Shredded carrots
  • 1/4 cup Sliced green onions
  • 1/4 cup Sliced almonds
For the Dressing
  • 1/4 cup Rice wine vinegar
  • 2 tablespoons Honey Maple syrup for vegan
  • 2 tablespoons Sesame oil
  • 2 tablespoons Hoisin sauce
  • 2 tablespoons Soy sauce Tamari for gluten-free
  • 1 teaspoon Minced ginger
  • 1 clove Minced garlic
  • 1/4 cup Vegetable oil Neutral oil can be used

Method
 

Preparation
  1. Chop the romaine or iceberg lettuce and shred the red cabbage.
  2. Shred the cooked chicken and drain the mandarin oranges.
  3. Crush the ramen noodles by hand.
Combine Salad
  1. In a large mixing bowl, combine the lettuce, cabbage, and chicken.
  2. Add the mandarin oranges, crushed ramen noodles, shredded carrots, green onions, and sliced almonds, and toss gently.
Make Dressing
  1. In a medium bowl, whisk together rice wine vinegar, honey, sesame oil, hoisin sauce, soy sauce, minced ginger, and minced garlic.
  2. Drizzle in vegetable oil while whisking.
Dress Salad
  1. Drizzle dressing over salad right before serving.
  2. Toss gently to coat all ingredients.
