Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the cottage cheese, egg, and vanilla extract until completely smooth. Add optional sweetener and almond flour if using.
  3. Gently fold in the blueberries into the mixture, being careful not to mash them.
  4. Pour the batter into individual ramekins or a suitable baking dish, filling each about three-quarters full. Sprinkle extra blueberries on top.
  5. Bake for 25-28 minutes, until golden brown and just set in the center. A toothpick should come out clean with a few moist crumbs.
