- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the cottage cheese, egg, and vanilla extract until completely smooth. Add optional sweetener and almond flour if using.
- Gently fold in the blueberries into the mixture, being careful not to mash them.
- Pour the batter into individual ramekins or a suitable baking dish, filling each about three-quarters full. Sprinkle extra blueberries on top.
- Bake for 25-28 minutes, until golden brown and just set in the center. A toothpick should come out clean with a few moist crumbs.
- Allow the bowls to cool for about 5 minutes before serving warm or refrigerating to enjoy cold.
