- Preheat your oven to 180°C (350°F).
- Generously season the cod fillets with salt and pepper.
- In a skillet, heat olive oil over medium heat, add onion, and sauté until translucent.
- Stir in garlic and ginger, cooking until fragrant.
- Add coconut milk, lemon juice, and lemon zest, and bring to a gentle simmer for 5 minutes.
- In a baking dish, lay the seasoned cod and pour the sauce over it.
- Slide the baking dish into the oven and bake for 20-25 minutes, until cod flakes easily with a fork.
- Remove from the oven and let it rest for a couple of minutes before serving.
- Serve with jasmine rice or sautéed green beans.
