Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F).
  2. Season the cod fillets generously with salt and pepper on both sides.
  3. In a medium skillet, heat olive oil and sauté onion for 3-4 minutes until translucent.
  4. Add minced garlic and grated ginger, sauté for 1-2 minutes until aromatic.
  5. Pour in coconut milk, lemon juice, and zest, simmer for 2 minutes until slightly thickened.
  6. Place seasoned cod in a greased baking dish and pour the sauce over it.
  7. Bake for 20-25 minutes until the cod flakes easily and is opaque.
  8. Let the dish rest for 3-5 minutes before serving.
