Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, combine the lite coconut milk, Thai red curry paste, minced garlic, soy sauce, fish sauce (if using), and sesame oil. Whisk until smooth.
  3. Toss in the fresh spinach, stirring gently to coat the greens in the curry broth.
  4. Carefully arrange the frozen dumplings in the baking dish, pinched-side down into the sauce, and spoon some curry broth over each dumpling.
  5. Cover the baking dish with a lid or aluminum foil. Bake for 20-40 minutes, checking at 20 minutes for doneness.
  6. After baking, let the dish sit for a few minutes before serving. Garnish with sliced scallions, chopped cilantro, sesame seeds, and chili crisp.
