Ingredients
  

For the Tart
  • 4 large Eggs Room temperature for better baking consistency
  • 8 oz Boursin Cheese Can substitute with goat cheese or herbed cream cheese
  • 1 sheet Puff Pastry Thawed completely before use
  • 4 oz Prosciutto Can swap for crispy bacon or smoked salmon
For the Arugula Salad
  • 4 cups Arugula Any mixed greens can serve as an alternative
  • 2 tbsp Olive Oil Used for dressing
  • 1 tbsp Lemon Juice Freshly squeezed for best flavor
For the Topping
  • 1 tbsp Everything But The Bagel Seasoning Can substitute with sesame seeds or omit
  • 2 oz Parmigiano Cheese Freshly shaved for the best flavor

Method
 

Directions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a floured surface, scoring a half-inch border along the edges.
  3. Whisk together an egg with a tablespoon of water and brush the pastry with the egg wash.
  4. Bake the tart shell for 10 minutes until golden and puffy.
  5. Spread a layer of Boursin cheese over the pastry once slightly cooled.
  6. Crack the eggs into the tart, spacing them evenly, and season with salt and pepper.
  7. Return the tart to the oven and bake for an additional 12-14 minutes.
  8. Toss arugula with olive oil, lemon juice, and salt in a large bowl.
  9. Cool the tart slightly, top with arugula salad and shaved Parmigiano before serving.
