  • 1 cup Red Bell Pepper Sliced
  • 1 cup Yellow Bell Pepper Sliced
  • 1 medium Red Onion Sliced

  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
For the Base
  • 1 cup Mexican Spicy Rice Cooked
  • 1 cup Sweetcorn Frozen or fresh
For Protein and Toppings
  • 1 can Black Beans Drained and rinsed
  • 1 cup Pico de Gallo Fresh salsa
  • 1 medium Avocado Diced
  • 1 cup Little Gem Lettuce Chopped
For the Dressing
  • 1/2 cup Creamy Salsa Dressing Or plant-based yogurt alternative

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (395°F) and line a baking sheet with parchment paper.
  2. Drain and press the tofu, then crumble it into a bowl. Spread the crumbled tofu on one half of the baking sheet and arrange sliced bell peppers and onion on the other half.
  3. Drizzle vegetables with olive oil and sprinkle cumin and smoked paprika. Mix well to coat evenly.
  4. Bake for 25-30 minutes until the tofu is golden brown and veggies are tender.
  5. While baking, cook the Mexican spicy rice according to package instructions.
  6. Prepare the creamy salsa dressing by mixing together salsa and a plant-based yogurt alternative until smooth.
  7. In a large bowl, combine cooked rice, crispy tofu, roasted vegetables, sweetcorn, black beans, lettuce, diced avocado, and pico de gallo.
  8. Drizzle dressing over the bowl and toss gently to combine. Serve immediately.
