  • 2 cups Spiral Shaped Pasta or gluten-free pasta
  • 2 lbs Chicken Breasts or skinless thighs
  • 2 tbsp Olive Oil
  • 1 tsp Garlic Salt or fresh garlic
  • 1 tsp Black Pepper or white pepper
  • 1 cup Whole Kernel Corn fresh is best
  • 1 medium Seedless Cucumber or zucchini
  • 1 large Red Bell Pepper
  • 1 small Red Onion or shallots
  • 3 stalks Green Onions or chives
  • 1 cup Cheddar Cheese Monterey Jack or Mozzarella can substitute
For the Dressings
  • 1 cup Ranch Dressing homemade is ideal
  • 1 cup Barbecue Sauce Open Pit recommended
  • 1 tbsp Soy Sauce to taste
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Dried Oregano
  • 1 tsp Dried Parsley

Method
 

Step‑by‑Step Instructions
  1. Cook the pasta according to package instructions, drain, and rinse under cold water.
  2. Prepare the chicken by cutting into bite-sized pieces and seasoning with olive oil, garlic salt, and black pepper.
  3. Sauté corn in a skillet until golden brown, then set aside.
  4. Cook the seasoned chicken in the skillet until golden and cooked through.
  5. Chop the cucumber, bell pepper, onion, and green onions, and place in a mixing bowl.
  6. Add cheese to the bowl and mix gently.
  7. Prepare the dressings by mixing ranch dressing and combining barbecue sauce with soy sauce and spices.
  8. Coat the cooked chicken with the barbecue sauce mixture.
  9. Combine all salad ingredients in the mixing bowl.
  10. Stir the ranch dressing into the salad, mix well, and serve immediately.
