Ingredients
  

For the Filling
  • 2 cups Shredded Chicken can substitute with canned or rotisserie chicken
  • 1 cup BBQ Sauce your favorite brand or homemade
  • 2 tablespoons Honey can substitute with agave syrup or maple syrup
  • 1 tablespoon Hot Sauce adjust according to spice preference
  • 1 medium Red Onion sliced
  • 2 cups Bell Peppers sliced, mixed colors for presentation
  • 1/4 cup Cilantro optional but highly recommended
For the Cheesy Goodness
  • 1 cup Cheddar Cheese sharp cheddar for extra zing
  • 1 cup Mozzarella Cheese for stretchy, gooey texture
For the Tortillas
  • 4 pieces Flour Tortillas can substitute with whole wheat or corn
  • 1 tablespoon Olive Oil to prevent sticking
To Taste
  • Salt
  • Pepper
For Serving (Optional)
  • Sour Cream or plain Greek yogurt as a healthy alternative
  • Guacamole or pico de gallo for a zesty kick

Method
 

Step 1: Prepare the BBQ Chicken Mixture
  1. In a medium mixing bowl, combine the shredded chicken with BBQ sauce, honey, and hot sauce. Stir until well-coated.
Step 2: Sauté the Vegetables
  1. Heat olive oil in a large skillet over medium heat. Add sliced red onions and bell peppers, sauté for about 5 minutes.
Step 3: Assemble the Quesadillas
  1. Lay a flour tortilla flat, sprinkle half with cheese, layer with BBQ chicken mixture, sautéed onions and peppers, and cilantro.
Step 4: Fold the Tortilla
  1. Carefully fold the tortilla in half, pressing down to enclose the filling.
Step 5: Cook the Quesadillas
  1. In the same skillet, add olive oil if necessary and cook folded quesadilla for about 3 minutes on each side.
Step 6: Slice and Serve
  1. Once golden brown, remove from skillet, let rest for a minute, and slice into wedges.
Step 7: Repeat for Remaining Quesadillas
  1. Continue assembly and cooking with remaining tortillas and fillings.
Step 8: Serve with Dipping Sauces
  1. Arrange quesadilla wedges on a platter, serve warm with sour cream and guacamole if desired.
