  • 1 cup shredded cheese cheddar or Monterey Jack; can use mozzarella
  • 1/2 cup red onion omit or swap for green onions if desired
  • 1/4 cup fresh cilantro omit if herbs aren’t your style
For the Tortilla
  • 4 pieces flour tortillas can use whole wheat tortillas as substitute

Step-by-Step Instructions
  1. In a spacious mixing bowl, combine shredded chicken with your favorite BBQ sauce. Set aside.
  2. Place a large skillet over medium heat and drizzle in a bit of olive oil, allowing it to warm up.
  3. Lay one flour tortilla flat, sprinkle half of the shredded cheese on top, then layer half of the BBQ chicken mixture, red onion, and fresh cilantro.
  4. Add another layer of cheese on top of the filling and carefully place a second tortilla over the top.
  5. Cook for about 3-4 minutes, then flip and cook for another 3-4 minutes until both sides are crisp.
  6. Transfer to a cutting board, let rest for 1 minute, and slice into wedges.
  7. Repeat with remaining tortillas and filling, serving with optional toppings.
