Method

Cooking Instructions
  1. In a large pot, cook chopped bacon over medium heat for 6-8 minutes until crispy and golden brown. Remove with a slotted spoon, leaving drippings.
  2. In the same pot, add sliced sausage and cook for about 5 minutes until browned. Remove and set aside, allowing drippings to remain.
  3. Add diced onion, carrots, and celery to the pot; sauté in reserved drippings for 5 minutes until tender. Stir in minced garlic for an additional 30 seconds.
  4. Sprinkle flour over the vegetables, stirring for 1 minute. Gradually pour in beer, stirring until the mixture becomes bubbly.
  5. Pour in chicken broth and bring to a gentle simmer for 3-4 minutes. Reduce heat to medium-low.
  6. Add diced potatoes, thyme, and smoked paprika. Simmer for 15-20 minutes until potatoes are fork-tender.
  7. Stir in reserved bacon and sausage, along with heavy cream. Warm through for 2-3 minutes.
  8. Remove from heat and stir in softened cream cheese and cheddar cheese until melted and creamy.
