Donut Preparation
- Prepare Dry Ingredients: In a large bowl, sift together the cake flour, baking powder, baking soda, and salt. Set aside.
- Mix Wet Ingredients: In a stand mixer, beat the granulated sugar, vanilla, shortening, and melted butter for about 3 minutes until light and fluffy. Add the egg yolks and buttermilk, mixing until fully incorporated.
- Combine Ingredients: Gradually add the sifted dry ingredients to the wet mixture on low speed. Mix just until combined.
- Chill Dough: Cover the dough with plastic wrap and refrigerate for 30-60 minutes.
- Shape Bars: On a floured surface, gently pat the chilled dough into a rectangle about 1 inch thick. Cut into bar shapes.
- Heat Oil: In a deep pot, heat shortening to a temperature between 330-350°F.
- Fry Bars: Carefully add the shaped doughnut bars to the hot oil, frying in batches until golden brown.
- Prepare Glaze: In a medium bowl, whisk together the confectioners' sugar, vanilla, and warm water until smooth.
- Glaze Doughnuts: Dunk each fried doughnut into the glaze while warm, allowing excess to drip off.

Notes
For best results, measure ingredients accurately and do not overmix the dough. Ensure to glaze while warm for maximum flavor absorption.
