Step-by-Step Instructions
  1. Heat olive oil in a large pot over medium heat. Add diced onion and bell peppers, sauté for 5-7 minutes until softened. Stir in minced garlic and cook for 1 additional minute.
  2. Add chicken breasts, Cajun seasoning, cumin, and smoked paprika to the pot. Cook for 5-7 minutes until chicken is browned.
  3. Pour in chicken broth, great northern beans, and diced green chilies. Bring to a gentle boil, then reduce heat to low and simmer uncovered for 30-60 minutes.
  4. Stir in frozen corn and heat through for about 5 minutes.
  5. Optional: Stir in heavy cream or sour cream for a creamy finish.
  6. Season with salt and pepper to taste, adjusting for heat with cayenne pepper if desired.
  7. Serve in bowls, garnished with cilantro, sour cream or Greek yogurt, cheddar cheese, and lime wedges.
