  • 1 sheet Puff Pastry Ensure it’s chilled

Method
 

Preparation Steps
  1. Melt butter and olive oil in a skillet over medium heat. Add sliced onions and a pinch of salt; cook for 20-25 minutes until caramelized.
  2. Preheat oven to 200°C (400°F). Toss sweet potato slices with olive oil, salt, and pepper; roast for about 15 minutes until fork-tender.
  3. Unroll chilled puff pastry onto a parchment-lined baking tray, leaving a 1-2 inch border. Spread caramelized onions in the center.
  4. Layer roasted sweet potato slices over onions, crumble feta on top, and sprinkle with thyme.
  5. Fold edges of puff pastry over filling, brush with beaten egg for a golden finish.
  6. Bake in preheated oven for 25-30 minutes until pastry is golden brown.
  7. Let cool for a few minutes, then serve warm, garnished with herbs or a drizzle of olive oil.
