Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking tray with parchment paper.
  2. Sift together 4 cups of all-purpose flour, 1 teaspoon of baking soda, and 1 teaspoon of salt in a large mixing bowl.
  3. Stir in 1 cup of chopped fresh chives, 2 tablespoons each of chopped fresh thyme, rosemary, and sage, and fold in 1 cup of shredded cheddar cheese.
  4. Pour in 1 ¾ cups of buttermilk and mix until just combined.
  5. Knead the dough lightly on a floured surface about 5-6 times and form it into a rough ball.
  6. Flatten the dough into a rough circle about 7 inches in diameter.
  7. Transfer to the baking tray, score a cross on top about ½ inch deep.
  8. Bake for 15 minutes, then reduce the oven temperature to 375°F (190°C) and continue baking for another 30 to 35 minutes.
  9. Cool the bread wrapped in a tea towel for about 15 minutes before slicing.
