  • 1 cup Heavy Cream Can substitute with half-and-half
  • 1 cup Provolone Cheese Shredded
  • 1 cup Beef Broth
  • 1 tablespoon Worcestershire Sauce
For the Tortellini and Beef
  • 12 ounces Cheese Tortellini Cooked
  • 1 pound Beef (Ribeye or Sirloin) Thinly sliced
For the Vegetables
  • 1 medium Onion Sliced
  • 1 cup Bell Peppers Sliced
  • 2 cloves Garlic Minced
For the Seasoning
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Black Pepper
  • 1 teaspoon Salt
  • 2 tablespoons Olive Oil
Optional Garnishes
  • 2 tablespoons Parsley Chopped
  • 1 teaspoon Red Pepper Flakes Optional

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Add cheese tortellini and cook according to package instructions, about 3-5 minutes. Reserve 1/2 cup pasta water and drain.
  2. Heat olive oil in a skillet over medium-high heat. Sear the thinly sliced beef for 2-3 minutes on each side until browned. Remove and set aside.
  3. Add more olive oil if needed, sauté onions and bell peppers for 3-4 minutes. Add minced garlic and cook for 30 seconds.
  4. Pour in beef broth and Worcestershire sauce, scraping the pan to release any browned bits. Simmer for 2 minutes.
  5. Stir in heavy cream and add provolone cheese gradually, mixing until smooth. Adjust thickness with reserved pasta water if necessary.
  6. Return the beef and tortellini to the skillet, toss gently in the sauce until everything is heated through.
  7. Adjust seasoning to taste, serve hot garnished with parsley and red pepper flakes if desired.
