Chicken Marinade
  • 1 pound boneless, skinless chicken thighs Substitute with chicken breasts if desired.
  • 2 tablespoons lime juice Fresh is best, but bottled works too.

  • 3 cloves garlic (minced) Fresh offers optimal flavor.
  • 1 teaspoon cumin Ground coriander can be used if cumin is unavailable.
  • 1 teaspoon chili powder Can swap with paprika for mild tacos.
  • 1 teaspoon smoked paprika Regular paprika is a good alternative.
  • 1 teaspoon dried oregano Substitute with Italian seasoning if needed.
  • to taste salt and pepper Essential for enhancing flavors.
For Serving
  • 8-10 corn tortillas Flour tortillas can also be used.
  • ½ cup chopped white onion Red onion can be a milder option.
  • ½ cup chopped fresh cilantro Omit if not a fan.
  • 4 lime wedges Perfect for squeezing on top.
Optional Add-Ons
  • 1 medium sliced avocado or guacamole Enhances texture.
  • ½ cup crumbled cotija cheese Feta is a suitable substitute.

Method
 

Preparation
  1. In a mixing bowl, combine lime juice, olive oil, minced garlic, cumin, chili powder, smoked paprika, dried oregano, salt, and pepper. Add chicken thighs, coat well, cover and marinate for at least 30 minutes.
  2. Preheat your grill or skillet over medium-high heat. Grill chicken for 5-7 minutes on each side until cooked through (internal temperature of 165°F).
  3. Remove the chicken from heat and let it rest for 5 minutes. Slice into strips.
  4. Warm the corn tortillas in a dry skillet over medium heat for 20-30 seconds each side until warm and slightly charred.
  5. Assemble tacos with sliced chicken, chopped onion, cilantro, and lime juice. Add any optional toppings as desired.
