- In a mixing bowl, combine lime juice, olive oil, minced garlic, cumin, chili powder, smoked paprika, dried oregano, salt, and pepper. Add chicken thighs, coat well, cover and marinate for at least 30 minutes.
- Preheat your grill or skillet over medium-high heat. Grill chicken for 5-7 minutes on each side until cooked through (internal temperature of 165°F).
- Remove the chicken from heat and let it rest for 5 minutes. Slice into strips.
- Warm the corn tortillas in a dry skillet over medium heat for 20-30 seconds each side until warm and slightly charred.
- Assemble tacos with sliced chicken, chopped onion, cilantro, and lime juice. Add any optional toppings as desired.
