Step-by-Step Instructions
  1. Slice the ripe bananas into 1/4-inch rounds and arrange half on a lined baking sheet.
  2. Spread about 1/2 teaspoon of peanut butter on each banana slice, then stack the remaining banana slices on top.
  3. Freeze assembled banana bites for about 1 hour until firm.
  4. Melt chocolate chips and optional coconut oil in a microwave-safe bowl, stirring every 30 seconds until smooth.
  5. Dip each frozen banana bite into the melted chocolate and return to the lined baking sheet.
  6. Freeze the chocolate-coated bites for at least 1 hour or until the chocolate is set.
  7. Transfer chocolate bites to a freezer bag or container for storage.
