  • 1 cup Corn Can replace with roasted bell peppers.
  • 1 medium Avocado Can use diced mango.
  • 1/2 medium Red Onion Can swap with green onion.
  • 1 cup Halved Cherry Tomatoes Can substitute with diced bell peppers.
  • 1 cup Shredded Cheese Consider using dairy-free cheese.
  • 1/2 cup Sour Cream Greek yogurt can be a healthier alternative.

Method
 

Steps
  1. Prepare the Marinade: Whisk lime juice, olive oil, chopped cilantro, minced garlic, cumin, chili powder, salt, pepper, and smoked paprika in a bowl.
  2. Marinate the Steak: Place the steak in a zip-top bag with the marinade, seal, and refrigerate for 30 minutes to 4 hours.
  3. Cook the Rice: Prepare rice according to package instructions, fluff with fork, and mix in lime juice, cilantro, and salt.
  4. Heat the Black Beans: Warm black beans in a saucepan with cumin and salt for about 5 minutes.
  5. Char the Corn: Cook corn in a skillet over medium heat for 6-8 minutes until blistered.
  6. Prepare the Vegetables: Slice avocado and red onion.
  7. Sear the Steak: Sear marinated steak in a hot skillet for 3-4 minutes per side.
  8. Assemble the Bowls: Start with rice, top with beans, corn, steak, avocado, onion, tomatoes, and cheese.
  9. Final Touches: Add sour cream or Greek yogurt, lime juice, and garnish with cilantro.
