Ingredients

For the Batter
  • 3 large Ripe Bananas Adds natural sweetness and moisture; use overly ripe bananas for the best flavor.
  • 0.5 cup Granulated Sugar Provides sweetness; can substitute with coconut sugar for a healthier option.
  • 0.25 cup Brown Sugar Adds depth and moisture; dark brown sugar can intensify the flavor.
  • 0.33 cup Unsalted Butter Fats bind ingredients and provide richness; substitute with coconut oil for a dairy-free version.
  • 2 large Large Eggs Helps bind the ingredients and creates a tender crumb.
  • 1 teaspoon Vanilla Extract Enhances flavor profile; use real vanilla for better taste.
  • 1 teaspoon Baking Soda Acts as a leavening agent; ensure it's fresh for optimal rising.
  • 0.5 teaspoon Salt Balances sweetness and enhances flavor.
  • 1.5 cups All-Purpose Flour Provides structure to the bread; whole wheat flour can be used for a healthier alternative.
  • 1 tablespoon Cinnamon Key spice that gives the bread its cinnamon roll flavor.
For the Cinnamon Swirl
  • 0.33 cup Granulated Sugar Sweetens and complements the cinnamon flavor.
For the Glaze
  • 1 cup Powdered Sugar Creates a sweet, drizzle-able frosting; can omit for a less sweet option.
  • 1 tablespoon Milk Adjusts the consistency of the glaze; use any milk alternative if desired.

Equipment

  • 9x5-inch loaf pan
  • mixing bowl
  • Whisk
  • knife or skewer

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan with butter or cooking spray.
  2. In a large mixing bowl, mash the ripe bananas, then blend in granulated sugar, brown sugar, and melted butter. Whisk in eggs and vanilla extract until well incorporated.
  3. Sprinkle baking soda and salt over the wet mixture. Gradually add in all-purpose flour, folding it in gently until just combined.
  4. In a small bowl, combine granulated sugar with ground cinnamon. This will create the cinnamon sugar mixture for swirling.
  5. Pour half of the batter into the prepared loaf pan and sprinkle half of the cinnamon sugar over it.
  6. Add the remaining batter into the loaf pan and top with the remaining cinnamon sugar.
  7. Using a butter knife, gently swirl through the batter to combine the layers slightly.
  8. Bake for 50 to 60 minutes, checking doneness with a toothpick; it should come out clean.
  9. Allow the bread to cool in the pan for 10 to 15 minutes, then transfer to a wire rack.
  10. Mix powdered sugar with milk until smooth for the glaze. Drizzle it over the cooled bread.
  11. Let the glaze settle before slicing the bread for serving.
