Method
 

Preparation
  1. In a mixing bowl, combine ricotta cheese, powdered sugar, vanilla extract, cinnamon, and mini chocolate chips. Blend until smooth and creamy.
  2. Preheat your oven to 375°F (190°C).
  3. Roll out one pie crust and press it into the bottom of a 9x9-inch baking dish.
  4. Spread the ricotta filling evenly over the crust.
  5. Cover with the second pie crust and crimp the edges to seal. Brush beaten egg and sprinkle sugar on top.
  6. Bake for 30-35 minutes until golden brown.
  7. Let cool for at least 30 minutes before slicing.
