  • 1 teaspoon Honey optional
  • 1/4 cup Parmesan Cheese optional

Step-by-Step Instructions
  1. Begin by washing and drying your romaine lettuce; chop it into bite-sized pieces and place it in a large mixing bowl.
  2. Halve your cherry tomatoes and slice the cucumbers into thin rounds.
  3. Thinly slice the red onion and pepperoncini, then set all of the veggies aside.
  4. In a medium bowl, whisk together Greek yogurt and mayonnaise until smooth and creamy, about 30 seconds.
  5. Gradually add in the red wine vinegar and lemon juice while continuing to whisk, incorporating the extra virgin olive oil until the dressing reaches a silky consistency.
  6. Mix the dried herbs into the dressing, and whisk in a touch of honey and Parmesan cheese for depth.
  7. In your large bowl with prepared vegetables, combine the chopped romaine, halved cherry tomatoes, sliced cucumbers, red onion, pepperoncini, kalamata olives, and crumbled feta cheese.
