Cooking Steps
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering.
  2. Add 12 ounces of sliced smoked sausage to the pot, cooking for 4-5 minutes until browned.
  3. In the same pot, add one small diced onion. Sauté for about 3 minutes until softened.
  4. Stir in 4 cups of chopped green cabbage, cooking for 3-4 minutes until tender.
  5. Pour in 4 cups of chicken broth and 1 cup of water, season with salt, pepper, paprika, and thyme.
  6. Return the browned sausage to the pot and bring to a gentle boil.
  7. Let the soup simmer uncovered for 20-25 minutes until the potatoes are fork-tender.
  8. Taste and adjust the seasoning, then serve garnished with freshly chopped parsley.
