- In a medium saucepan, warm up 2 tablespoons of bacon grease over medium heat for about 1 minute until it shimmers.
- Add ½ cup of finely diced onion to the pan, stirring occasionally for about 3-4 minutes until they turn soft and translucent.
- Stir in 1 cup of uncooked long-grain white rice and toast it for 1-2 minutes.
- Pour in 14.5 ounces of undrained diced tomatoes along with 2 cups of low-sodium chicken broth, and season with ½ teaspoon of salt and ¼ teaspoon of black pepper.
- Increase the heat to high to bring your mixture to a light boil, about 3-4 minutes.

- After the cooking time, remove the pot from heat, keeping it covered for an additional 5 minutes to allow the steam to finish the cooking.
