  2. Melt 2 tablespoons of butter in a large pot over medium heat. Add diced onions and sauté for about 5 minutes until softened.
  3. Stir in 1 can of cream of mushroom soup, 1 cup of milk, and 1 cup of sour cream with seasonings. Mix for about 3 minutes.
  4. Incorporate 1 cup of shredded cheddar cheese and stir until melted and velvety.
  5. Fold in 3 cups of frozen broccoli and mixed vegetables, heating for an additional 2 minutes.
  6. Whisk 2 eggs in a separate bowl, then add to the mixture along with 1 cup of cooked rice, stirring to combine.
