  • 8 ounces bow tie pasta any pasta shape can be used
For the Roasted Veggies
  • 2 cups butternut squash cubed
  • 2 cups Brussels sprouts trimmed and halved
  • 2 tablespoons olive oil or vegetable oil
For the Flavor
  • 12 ounces smoked sausage Cajun or Andouille varieties recommended
  • 3 cloves garlic minced
  • 4 tablespoons butter or plant-based butter
  • 1 teaspoon smoked paprika or regular paprika
  • 1 teaspoon fresh thyme or dried thyme in pinch

Method
 

Preparation Steps
  1. Preheat your oven to 200°C (400°F).
  2. Toss cubed butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes until golden brown.
  3. After 10 minutes, prepare and roast Brussels sprouts with olive oil, salt, and pepper for 20-30 minutes.
  4. Boil a large pot of salted water, add bow tie pasta, and cook according to package instructions until al dente.
  5. In a skillet, heat olive oil and brown sliced smoked sausage for 5-7 minutes.
  6. Add minced garlic to the skillet and sauté for 1-2 minutes until golden.
  7. Melt butter in the skillet with garlic, then stir in smoked paprika.
  8. Combine the pasta, roasted butternut squash, Brussels sprouts, and sausage in a bowl. Pour the garlic butter sauce over and toss gently.
