- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- In a large skillet over medium heat, add olive oil and heat for about 1 minute. Add ground beef, breaking it up, and cook for 5–7 minutes until browned.
- In the same skillet, add onion and garlic, sautéing for 3–4 minutes until the onion is soft.
- Layer the cooked beef on the bottom of the greased baking dish, then layer the sliced potatoes on top, seasoning with salt, pepper, Italian seasoning, and paprika.
- Sprinkle cheddar and parmesan cheese over the potatoes, then pour beef broth around the edges.
- Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15–20 minutes until cheese is bubbling and top is golden.
- Let casserole rest for a few minutes before serving, garnishing with chopped parsley if desired.
