Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x9-inch baking dish.
  2. In a large mixing bowl, combine the ground beef, plain breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and black pepper. Mix gently to combine.
  3. Transfer the mixture into the prepared baking dish, smoothing the top. Bake for 20-25 minutes until firm and slightly browned.
  4. While the meatloaf is baking, prepare the mashed potatoes by warming leftovers or mixing freshly made with sour cream and butter until creamy.
  5. Once the meatloaf is firm, spread the mashed potatoes evenly over the top and smooth with a spatula.
  6. Sprinkle shredded cheddar cheese over the mashed potatoes and return to the oven for an additional 10-15 minutes until cheese is melted and bubbly.
  7. Let the meatloaf rest for 5-10 minutes, garnish with parsley if desired, and slice to serve.
