  • 4 tablespoons butter
  • 1/2 cup milk can be replaced with plant-based milk
  • 1 cup shredded cheese optional
  • salt to taste
  • pepper to taste
Crust
  • 1 package pie crust store-bought or homemade
  • 1 large egg for egg wash

Method
 

Preparation
  1. Peel and chop potatoes, place in pot, cover with cold salted water, bring to boil, simmer for 15-20 minutes, drain.
  2. Add butter and milk to potatoes, mash until smooth, stir in cheese, salt, and pepper.
  3. Preheat oven to 375°F (190°C).
  4. Roll out pie crust, fit into pie dish, spoon filling into crust, top with second crust if desired, brush with egg wash.
  5. Bake for 25-30 minutes until crust is golden and filling is bubbling.
  6. Allow pie to cool for 10 minutes before serving.
