Instructions
  1. Preheat your oven to 325°F (163°C). Gather all ingredients.
  2. In a Dutch oven, heat olive oil and sear the chuck roast on all sides for 4-5 minutes until browned. Remove and set aside.
  3. Add quartered onions to the Dutch oven and cook until golden. Stir in garlic, thyme, and rosemary; cook for 2-3 minutes.
  4. Pour in the beef broth, balsamic vinegar, soy sauce, dark brown sugar, and Worcestershire sauce. Add cranberries and carrots.
  5. Nest the browned chuck roast into the mixture, cover tightly, and braise in the oven for 3-4 hours.
  6. Remove the roast and rest for 10-15 minutes. Mix cornstarch and water, stir into sauce to thicken.
  7. Slice the beef against the grain, coat with sauce, and serve warm.
