Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking dish with parchment paper.
  2. Mix salt and black pepper; rub the mixture over the chicken breasts. Drizzle olive oil over them.
  3. In a medium saucepan over medium heat, combine fresh cranberries, orange juice, and orange zest. Add honey or maple syrup and simmer for 5–7 minutes.
  4. Arrange the seasoned chicken in the baking dish and pour the cranberry-orange sauce over it, ensuring even coverage.
  5. Bake for 25–30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  6. Remove from oven and let the chicken rest for about 5 minutes to redistribute juices.
  7. Serve the chicken with the sauce over it, alongside rice or roasted vegetables.
