Ingredients
  

Crust
  • 1 cup all-purpose flour can substitute with gluten-free flour
  • 1/2 cup granulated sugar can be replaced with coconut sugar
  • 1/2 cup unsalted butter can substitute with dairy-free margarine
Cheesecake Layer
  • 8 oz cream cheese (softened) can substitute with dairy-free cream cheese
  • 1 egg can replace with flax egg or applesauce
Cranberry Swirl
  • 2 cups fresh or frozen cranberries can use frozen cranberries simmered longer
  • 1 tbsp orange zest can substitute with lemon zest
Topping
  • 1 cup powdered sugar optional for dusting before serving

Method
 

Baking Process
  1. Preheat your oven to 350°F (175°C).
  2. Combine flour, sugar, and butter in a bowl to make the crust.
  3. Press the mixture into the bottom of a parchment-lined 9-inch square baking dish.
  4. Bake the crust for about 15 minutes until light golden brown.
  5. In a saucepan, combine cranberries, sugar, and orange zest, and simmer for 10-15 minutes until jammy.
  6. In another bowl, mix cream cheese, egg, and granulated sugar until smooth.
  7. Spread the cheesecake mixture over the cooled crust and swirl in the cranberry filling.
  8. Bake for an additional 35-40 minutes until the edges are set and center is slightly jiggly.
  9. Cool the bars at room temperature for an hour then refrigerate for at least 3 hours.
  10. Cut into squares and dust with powdered sugar before serving.
