- Begin by placing the whole turkey breast-side down on a sturdy cutting board. Cut along each side of the backbone to remove it completely.
- Open the turkey up and press down on the breastbone to flatten it. Optionally cut the turkey in half for easier handling.
- In a medium saucepan, combine orange juice, cranberry juice, soy sauce, honey, cinnamon, nutmeg, and cornstarch. Heat over medium heat while stirring until thickened, around 5-7 minutes.
- Preheat your oven to 400°F (200°C). Place the flattened turkey on a roasting pan and brush a generous amount of the glaze over it. Roast for about 60 to 75 minutes, checking internal temperature reaches 165°F (74°C).
- Remove the turkey from the oven and let it rest for at least 15-20 minutes before slicing and serving with the remaining glaze on the side.
