Preparation Steps
  1. Begin by placing the whole turkey breast-side down on a sturdy cutting board. Cut along each side of the backbone to remove it completely.
  2. Open the turkey up and press down on the breastbone to flatten it. Optionally cut the turkey in half for easier handling.
  3. In a medium saucepan, combine orange juice, cranberry juice, soy sauce, honey, cinnamon, nutmeg, and cornstarch. Heat over medium heat while stirring until thickened, around 5-7 minutes.
  4. Preheat your oven to 400°F (200°C). Place the flattened turkey on a roasting pan and brush a generous amount of the glaze over it. Roast for about 60 to 75 minutes, checking internal temperature reaches 165°F (74°C).
  5. Remove the turkey from the oven and let it rest for at least 15-20 minutes before slicing and serving with the remaining glaze on the side.
