  • 2 cups cooked chicken, shredded
  • 1 cup avocado, mashed
  • 1/4 cup red onion, finely chopped
  • 1/4 cup celery, finely chopped
  • 2 tbsp lime juice to taste
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1/4 cup cilantro, chopped optional

Method
 

Instructions
  1. In a mixing bowl, combine shredded chicken, mashed avocado, red onion, celery, lime juice, salt, and black pepper. Mix until well combined.

  3. Serve immediately over a bed of greens or as a filling in a sandwich.
  4. Garnish with cilantro if desired.
