- Cook Pasta: Bring a large pot of salted water to a rolling boil. Add 8 oz of penne pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
- Sauté Chicken: Heat 1 tbsp of olive oil in a skillet over medium heat. Add 1 lb of sliced chicken breast with 2 tbsp of Cajun seasoning. Cook until browned and cooked through, about 6-8 minutes. Remove and set aside.
- Create Sauce: In the same skillet, sauté 1 clove of minced garlic for 30 seconds. Pour in 2 cups of heavy cream and stir to combine. Gradually add 1 cup of grated Parmesan cheese until melted and smooth.
- Combine: Add the cooked penne pasta to the sauce, tossing to coat. Season with salt and pepper to taste.
- Garnish and Serve: Transfer to serving plates and sprinkle with chopped parsley. Serve hot.
