Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once shimmering, add 12 ounces of sliced chicken sausage and brown for 3-5 minutes. Remove sausage from the skillet and set it aside, leaving the flavored oil.
  2. In the same skillet, add one finely chopped onion and sauté for 2-3 minutes until softened. Stir in 2 minced garlic cloves and cook for an additional 30 seconds.
  3. Add 1 cup of orzo pasta to the skillet, stirring frequently for about 1 minute to toast.
  4. Pour in 4 cups of low-sodium chicken broth, 1 teaspoon of dried thyme, 1 teaspoon of paprika, and a pinch of salt and black pepper. Bring to a gentle simmer for 8-10 minutes.
  5. Reduce heat to low, stir in 1 cup of heavy cream and 1 cup of shredded cheddar cheese, until smooth. Return the browned sausage to the skillet.
  6. Garnish with fresh parsley and lemon zest. Serve hot.
