  • 2 tablespoons Avocado oil Can substitute with any neutral oil if desired.
  • 1 cup Heavy cream Coconut cream can be used for dairy-free.
  • 2 tablespoons Fresh lemon juice Bottled lemon juice can substitute in a pinch.
  • 3 cloves Garlic Minced; fresh garlic preferred.
  • 2 tablespoons Fresh parsley Chopped for garnish; dill or chives can be used.

Method
 

Step-by-Step Instructions
  1. Pat each salmon fillet dry with paper towels and season with salt and pepper on both sides.
  2. Heat 2 tablespoons of avocado oil in a cast iron skillet over medium-high heat. Sear the salmon fillets skin-side up for 4-6 minutes until browned.
  3. Flip the salmon fillets and cook for an additional 3-5 minutes until the skin is crispy and the fish flakes easily.
  4. Remove salmon from skillet and set aside. Lower heat to medium-low, add cream, lemon juice, and garlic, and whisk together. Simmer for 3-4 minutes until the sauce thickens.
  5. Stir in parsley, taste and adjust seasoning. Spoon sauce over salmon and serve with additional sauce on the side.
