- Pat each salmon fillet dry with paper towels and season with salt and pepper on both sides.
- Heat 2 tablespoons of avocado oil in a cast iron skillet over medium-high heat. Sear the salmon fillets skin-side up for 4-6 minutes until browned.
- Flip the salmon fillets and cook for an additional 3-5 minutes until the skin is crispy and the fish flakes easily.
- Remove salmon from skillet and set aside. Lower heat to medium-low, add cream, lemon juice, and garlic, and whisk together. Simmer for 3-4 minutes until the sauce thickens.
- Stir in parsley, taste and adjust seasoning. Spoon sauce over salmon and serve with additional sauce on the side.
