  • 1 medium yellow onion diced
  • 1 cup carrots shredded or julienned
  • 2 cups sharp cheddar cheese freshly grated

Step-by-Step Instructions
  1. In a large pot, melt the butter over medium heat. Whisk in the flour for about 1-2 minutes until it forms a golden roux.
  2. Gradually whisk in the broth and then the milk or cream. Cook for 3-4 minutes until it thickens slightly.
  3. Add the broccoli, onion, and carrots, stirring well. Reduce heat to medium-low and simmer for 15-20 minutes.
  4. Remove from heat and stir in the cheddar cheese until melted and creamy.
  5. Season with salt, pepper, mustard powder, and paprika to taste, stirring to combine.
