- In a medium saucepan, melt 2 tablespoons of unsalted butter over medium heat. Add 1 chopped onion and cook until translucent, about 4 minutes. Stir occasionally.
- Sprinkle in 2 minced garlic cloves, stirring for an additional 30 seconds until fragrant.
- Sprinkle 2 tablespoons of all-purpose flour over the sautéed onions and garlic, stirring constantly to create a smooth paste. Cook for about 1 minute.
- Gradually whisk in 4 cups of broth and 1 cup of whole milk. Add 1 teaspoon of salt, 1 teaspoon of paprika, and ½ teaspoon of black pepper while whisking until smooth.
- Introduce 4 cups of chopped broccoli florets and 1 grated carrot into the pot and stir well. Bring to a simmer and cook covered for 10-12 minutes.
- Remove from heat and gradually add 1.5 cups of shredded smoked gouda, stirring gently until melted.
- Ladle into bowls and serve immediately, optionally topped with croutons.
