Ingredients
  

For the Yuca Cakes
  • 1 large Fresh Yuca (Cassava) Peeled and cored
  • 2 cloves Garlic Fresh recommended
  • 1 small Red Onion Finely chopped; can substitute shallots
  • 1/4 cup Fresh Cilantro Chopped; parsley can be used as a substitute
  • 1 teaspoon Salt Adjust to preference
  • 1/2 teaspoon Black Pepper Or white pepper for a milder taste
  • 1 teaspoon Smoked Paprika Or regular paprika for less smokiness
  • 1 large Egg Can use flax or chia seed egg for plant-based
  • 1/2 cup All-Purpose Flour Gluten-free blend can be substituted
  • 1 cup Vegetable Oil For frying
For the Garlic-Lime Mojo
  • 1/4 cup Olive Oil For sautéing garlic
  • 2 cloves Minced Garlic Fresh cloves preferred
  • 2 tablespoons Lime Juice Fresh juice is best
  • 1 tablespoon Vinegar Adjust to taste
  • 1/2 teaspoon Cumin Optional
  • 1/2 teaspoon Salt Tailor to suit your taste

Method
 

Directions
  1. Peel and cut the fresh yuca into chunks, place in salted boiling water, and simmer for about 20 minutes until fork-tender.
  2. Drain the yuca well and remove the fibrous core from the center.
  3. Mash the warm yuca in a mixing bowl until smooth but slightly textured, allowing it to cool.
  4. Add minced garlic, chopped red onion, cilantro, salt, pepper, smoked paprika, egg, and flour to the mashed yuca and mix until evenly blended.
  5. Shape the mixture into thick, round cakes about ½ inch high.
  6. Heat vegetable oil in a skillet over medium heat, fry each cake for 3-4 minutes per side until golden brown.
  7. For the mojo, heat olive oil in a small saucepan, sauté garlic until fragrant, then mix in lime juice, vinegar, cumin, and salt.
