  • 1 large Egg beaten
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper freshly ground
  • 1 tablespoon Olive Oil or cooking spray
For Dipping Sauce (Optional)
  • 1 cup Marinara Sauce for dipping
  • 2 tablespoons Fresh Chopped Parsley for garnish

Step‑by‑Step Instructions
  1. Preheat your oven to 425°F (or preheat your air fryer). Allow about 5-10 minutes for the appliance to fully heat up.
  2. Slice the zucchini into ¼ inch rounds and sprinkle lightly with salt. Let them rest for about 10 minutes before patting them dry.
  3. In one bowl, beat the large egg. In a separate dish, combine Parmesan cheese, panko breadcrumbs, garlic powder, dried herbs, black pepper, and salt.
  4. Dip each zucchini slice in the beaten egg, then press into the breadcrumb mixture, coating both sides well.
  5. Arrange coated zucchini slices on a wire rack over a baking sheet. Lightly spray with olive oil or cooking spray.
  6. Bake for 20-25 minutes, flipping halfway through, or air fry for 12-15 minutes, shaking the basket halfway.
  7. Remove the bites, garnish with parsley, and serve immediately with your favorite dipping sauce.
