Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Grate your zucchinis and sprinkle them with salt. Let sit for about 10 minutes, then squeeze out excess water.
  3. Combine the squeezed zucchini with breadcrumbs, feta cheese, Parmesan cheese, and egg. Add minced garlic, oregano, black pepper, and optional red pepper flakes.
  4. Shape portions of the mixture into 1-2 inch tots and place them on the baking sheet.
  5. Lightly spray or drizzle the tops of the tots with olive oil or cooking spray.
  6. Bake for 20-25 minutes, flipping halfway for even cooking.
  7. Once baked, allow to cool for a few minutes before serving warm.
