Method
 

Step-by-Step Instructions
  1. Prepare the chicken by patting it dry with paper towels and seasoning both sides generously with salt, pepper, and preferred spices.
  2. Preheat the grill pan on medium-high heat for about 2-3 minutes and drizzle olive oil.
  3. Carefully place the seasoned chicken in the pan and grill for 6-7 minutes on one side until golden brown, then flip and cook for another 5-6 minutes.
  4. Once cooked, transfer the chicken to a plate and let it rest for 3-5 minutes.
  5. Spread basil pesto on the inside of each roll, place grilled chicken, and top with slices of fresh mozzarella.
  6. Preheat the oven or broiler to low, then toast the assembled sandwich for 2-3 minutes until the cheese melts.
  7. Remove the sandwich from the oven, cut in half, and serve warm.
