- Prepare the chicken by patting it dry with paper towels and seasoning both sides generously with salt, pepper, and preferred spices.
- Preheat the grill pan on medium-high heat for about 2-3 minutes and drizzle olive oil.
- Carefully place the seasoned chicken in the pan and grill for 6-7 minutes on one side until golden brown, then flip and cook for another 5-6 minutes.
- Once cooked, transfer the chicken to a plate and let it rest for 3-5 minutes.
- Spread basil pesto on the inside of each roll, place grilled chicken, and top with slices of fresh mozzarella.
- Preheat the oven or broiler to low, then toast the assembled sandwich for 2-3 minutes until the cheese melts.
- Remove the sandwich from the oven, cut in half, and serve warm.
