  • 1 cup Grated Cheddar Cheese Can substitute with any meltable cheese.
  • 1 cup Breadcrumbs Gluten-free breadcrumbs work too.
  • 1/2 cup Onion (finely chopped) Shallots can be used for milder taste.
  • 1 teaspoon Garlic Powder Fresh minced garlic can be used.
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Ground Black Pepper Can substitute with white pepper.
  • 1/4 cup Parsley (optional) Substitute with other finely chopped herbs.
For the Garlicky Yogurt Dip
  • 1 cup Greek Yogurt Non-dairy yogurt can be used.
  • 1 tablespoon Lemon Juice Adjust according to taste.
  • 2 tablespoons Minced Parsley or Dill Any fresh herb can be used.

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. Grate the yellow squash into fine shreds, sprinkle salt, and let it drain in a colander for about 10-15 minutes.
  3. Squeeze out excess moisture from the grated squash until no liquid drips.
  4. Combine drained squash with beaten egg, cheese, breadcrumbs, onion, garlic powder, salt, pepper, and parsley in a bowl.
  5. Form small tots using wet hands and place them on the prepared baking sheet.
  6. Bake for approximately 25 minutes until golden brown on top.
  7. For the dip, mix Greek yogurt, lemon juice, garlic powder, salt, and minced herbs until smooth.
  8. Serve warm with the garlicky yogurt dip and enjoy!
