Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together unsalted butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. Whisk together flour, baking powder, and salt, then gradually add to wet ingredients, mixing gently.
  5. Scoop the dough onto prepared baking sheet, spacing about 2 inches apart.
  6. Bake cookies for 15-20 minutes until edges are golden and centers look set.
  7. Whip heavy cream and powdered sugar until soft peaks form for the cream filling.
  8. Pipe cream filling onto flat side of half the cookies and sandwich with remaining cookies.
