Preparation
- Prepare Cheese Filling: In a mixing bowl, combine cream cheese, heavy cream, sugar, and vanilla extract. Whisk until smooth, then pour into a mold and freeze for 3 hours.
- Make Kataifi Layer: Finely chop kataifi, melt butter in a skillet, add kataifi, and sauté until crispy. Let cool.
- Prepare Chocolate Ganache: Heat heavy cream in a saucepan, remove from heat, stir in milk chocolate until smooth. Cool to room temperature.
- Create Pistachio Ganache: Simmer heavy cream, remove from heat, stir in white chocolate and pistachio cream until blended. Cool slightly.
- Assemble: Press half the kataifi into the mold, place cheese filling on top, cover with remaining kataifi, and chill for 30 minutes.
- Decorate: Remove from mold, drizzle ganaches on top, and let rest before slicing.
