Preparation Steps
  1. Preheat your oven to 160°C (320°F) and prepare your baking tray by greasing it and lining it with parchment paper.
  2. Combine dried fruits with brandy in a medium bowl and soak for at least 30 minutes.
  3. In a large mixing bowl, cream together the softened butter and sugar using an electric mixer until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Sift together flour and baking powder in a separate bowl, then gradually mix into the wet ingredients.
  6. Fold in the brandy-soaked fruit mixture into your cake batter.
  7. Pour the batter into the prepared baking tray and bake for 1 hour, until a skewer comes out clean.
  8. Allow the cake to cool in the tray for about 15-20 minutes before transferring to a wire rack.
  9. Once cooled completely, decorate with marzipan and fondant if desired.
