Preparation Steps
- Preheat your oven to 160°C (320°F) and prepare your baking tray by greasing it and lining it with parchment paper.
- Combine dried fruits with brandy in a medium bowl and soak for at least 30 minutes.
- In a large mixing bowl, cream together the softened butter and sugar using an electric mixer until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Sift together flour and baking powder in a separate bowl, then gradually mix into the wet ingredients.
- Fold in the brandy-soaked fruit mixture into your cake batter.
- Pour the batter into the prepared baking tray and bake for 1 hour, until a skewer comes out clean.
- Allow the cake to cool in the tray for about 15-20 minutes before transferring to a wire rack.
- Once cooled completely, decorate with marzipan and fondant if desired.
