- Finely chop the white onions and mince the fresh garlic. Set aside.
- Measure the Cajun seasoning, sweet paprika, crushed red chili flakes, and coarse black pepper in a bowl.
- Heat olive oil and unsalted butter in a saucepan over medium-low heat until the butter melts.
- Add chopped onions and sauté for 4-5 minutes until translucent.
- Stir in minced garlic and cook for an additional 60-90 seconds avoiding browning.
- Add the spice blend and stir for about 30 seconds.
- Add remaining unsalted butter and whisk to combine until smooth.
- Slowly pour in the warm seafood stock while whisking to emulsify the sauce.
- Turn off the heat and add lemon wedges and parsley, stirring to combine.
