For the Enchilada Sauce
  • 2 tbsp Olive Oil Substitute with light cooking oil
  • 3 tbsp Flour Cornstarch is a gluten-free alternative
  • 2 cups Chicken Stock Vegetable stock for vegetarian option
  • 1.5 cups Tomato Passata Canned tomato sauce or crushed tomatoes can be used
  • 1/4 tsp Salt Adjust according to taste
  • 1/4 tsp Pepper Adjust according to taste
For the Filling
  • 2 Garlic Cloves Minced
  • 1 Onion Finely chopped
  • 1 lb Ground Beef Can substitute with turkey or lean pork
  • 400 g Refried Beans Canned
  • 400 g Black Beans Drained
For Assembling
  • 8 Tortillas Flour or corn or gluten-free
  • 1.5 cups Grated Melting Cheese Cheddar and Monterey Jack mix can be used
  • Cilantro/Coriander Leaves Optional garnish

Step-by-Step Instructions for Beef Enchiladas
  1. In a small bowl, combine onion powder, garlic powder, cumin, paprika, and oregano. Mix thoroughly until well blended.
  2. In a medium saucepan, heat olive oil over medium heat. Stir in flour to create a paste, cooking for about 1 minute until golden. Gradually whisk in chicken stock and tomato passata. Thicken for 3-5 minutes, seasoning with salt, pepper, and prepared spice mix.
  3. In a large skillet, heat olive oil and sauté minced garlic and chopped onion until soft (about 3 minutes). Add ground beef, cooking until browned. Stir in spice mix, refried beans, black beans, and a splash of enchilada sauce, simmering briefly.
  4. Preheat oven to 350°F (180°C). In a baking dish, spread a thin layer of enchilada sauce. Take a tortilla, fill it with the beef filling, and roll tightly. Place seam-side down in the baking dish.
  5. Pour remaining sauce evenly over the enchiladas, sprinkle with grated cheese, cover with foil and bake for 10 minutes. Remove foil and bake for an additional 10 minutes.
